Vegan Lettuce Wrap

Who doesn't enjoy Mexican food and its famous tacos? These are so tasty but rarely vegan-friendly and gluten-free to our dismay. 

To overcome this great despair, today we share with you a recipe of yummy lettuce wrap recipe with a touch of Asian flavors.

It's sometimes difficult to find lettuce tacos that satisfy our hunger effectively. Although we usually find these vegan wrap recipes in diet programs to lose weight, it doesn't mean that you can't prepare a super comforting version of them that is both healthy and savory!

Did we mention that they're also high in protein 😱? Keep reading! 

Serving Size: 6 tacos

Preparation time: 45 minutes

Ingredients
For the spicy sauce:

  • ½ cup of organic peanut butter
  • ⅓ cup of tamari sauce
  • ⅓ cup of sesame oil
  • ¼ cup of rice vinegar
  • 2 tablespoon of chili paste (or more, up to you!)
  • 1 tablespoon of natural agave syrup (Maple, coconut or rice syrup will also do the job)
  • 1 thumb of peeled fresh ginger
  • 1 clove of peeled fresh garlic

For the lettuce wrap:

  • 1 pack of extra firm tofu
  • 120g of rice noodles
  • Romaine or Butterhead Lettuce

Fancy toppings:

  • Crushed peanuts
  • Cilantro
  • Lemon

Lettuce Vegan wrap

Instructions

  1. Preparing the noodles: Rinse the noodles in cold water and put them in a large bowl with boiling water for 6 to 8 minutes (depending on the brand, check the pack). Drain them and put them under cold water, set aside.
  2. Prepare your sauce: place all the ingredients in a blender or food processor and mix until everything is integrated and has a creamy texture. Taste and adjust condiments if necessary.
  3. Prepare your tofu: wrap in paper towels or kitchen towels and place weight on top to remove excess moisture. Let it stand for 5-10 minutes or more and then cut it into small cubes. Heat a little oil in a skillet. Add tofu and cook for about 15 minutes or until golden brown. Add about half of the sauce you prepared to the skillet and cook for another 3-5 minutes. As the sauce cooks, it will also form crisp edges around the tofu - delicious texture and flavor!
  4. Add a little more oil to the skillet and add the noodles. Add the other half of the sauce. Cook for a minute or two until well covered. Add a little water if the mixture is too thick. Remove from heat and mix well with the tofu.

It's time to prepare your vegan tacos! Place some of the mixtures in the center of the lettuce leaves and serve with peanuts, cilantro, lime, your favorite hot sauce and enjoy!
